Right click in the area that used to show Quick Access. Click 'show libraries'. This will allow you to navigate the folder structures under documents etc. Hmmm, I think I know what you mean. I was used to viewing the"Quick Access" list in the left hand panel of Explorer in Windows 10.

Click Options on the right hand side of your current language. If the @ symbol on your keyboard is above the 2, you have a US English Keyboard. If the" symbol on your keyboard is above the 2, you have a UK English Keyboard. In options if the appropriate language does not appear, click 'Add input Method'.
